Cake in a Mug

I tried this cake in a mug recipe several years ago but I pretty much burned it, so I decided to give it another try.

Cake in a Mug

Ingredients used:
4 tablespoons all purpose flour
4 tablespoons granulated sugar
1 egg
3 tablespoons cocoa powder
3 (heaping)tablespoons Nutella
3 tablespoons milk
3 tablespoons vegetable oil

Directions:
1. Combine all the dry ingredients.
2. Add the remaining ingredients.
3. Mix everything with a fork until smooth.
4. Put in the microwave for 1 1/2 minutes.
5. Cool. Top with ice cream and enjoy.

Nutella Pizza

Here’s a super easy yummy breakfast I made the family while we were in Vegas last week… I call it Nutella Pizza.

I toasted bread and sliced them diagonally. Next, I spread some nutella on them. And finally I topped them with banana slices.

There were so yummy and the kids finished their breakfast! Yes!

Crockpot Chicken Soup

This morning, I asked hubby if he’d like leftovers for dinner tonight or something freshly made. I knew it, he was gonna say the latter. I had 5 minutes before I had to drop off Aaron in school and head on to work….

I grabbed a pack of chicken wings from the fridge. Then I chopped some celery, peeled and chopped a couple of carrots, peeled and diced half an onion, opened 2 cans of chicken broth and tossed them all in the crockpot. Then, I added a cup of water to keep it from drying up. And finally I put some salt, pepper and some onion powder to taste.

I turned on the crockpot to LOW and rushed out with Aaron.

After I left hubby was feeling creative and added some shell pasta. Our dinner was ready when I got home. Woohoo!

So here are the ingredients if you want to try to make this Crockpot Chicken Soup yourself at home. It’s super easy!

Ingredients:
1 1/2 lbs chicken wings
1/2 stalk of celery (chopped)
2 carrots (peeled and chopped)
1/2 onion (peeled and sliced)
2 cans of chicken broth
1 cup of water
salt
pepper
onion power
shell pasta (optional)

Directions:
Combine all the ingredients in the crockpot and leave on LOW for 8 hours.

I said the recipe was easy, not fast…LOL
I gotta love my crockpot!

Deep Fried Ice Cream

This is hubby’s version of the Deep Fried Ice Cream we normally order when we go to Acapulco or Chuy’s in Glendale. There is actually no deep frying involved but it taste just as good.

Deep Fried Icecream

Ingredients:
Vanilla Ice Cream
Frosted Flakes Cereal
Ground Cinnamon
Chocolate Syrup

Directions:
1. Crush the frosted flakes slightly in a bowl.
2. Add the cinnamon and mix well.
3. Scoop a generous amount of vanilla ice cream and form it into a ball.
4. Drop the ice cream ball in the crushed frosted flakes and remove quickly as soon as it’s covered to your liking.
5. Place nicely on a plate or small bowl and drizzle with chocolate syrup.

Yup, yup, I’ve been using the crockpot and I love it!

This is the latest dish I made with the Crockpot, Creamy Ground Beef, it’s very easy.

Ingredients:
3 medium size potatoes (cut into thick chunks)
1 medium onion (cubed)
1 lb ground beef
1 cup frozen corn
1 can cream of corn
1 can cream of mushroom
1 beef buillion
salt
pepper
1 tbsp cooking oil

Directions:
1. Saute half of the chopped onions in the oil.
2. Add the ground beef, brown and season with salt, pepper and the buillion.
3. Drain ground beef and set aside.
4. Layer the potatoes, groundbeef, rest of the onions, corn, cream of corn and cream of mushroom in the crockpot.
5. Cover and set in low for 6-7 hours.

Sweet Beef Steak

Here’s an Easy Beef Steak Recipe

Ingredients:
1/2 lb chuck steak (thinkly sliced and cut into strips)
1 medium onion (cut in strips)
1 tbsp cooking oil
2 tbsp oyster sauce
1 tbsp soy sauce
1/2 cup water
salt
pepper

Directions:
1. Saute the onions in the oil for a few minutes
2. Season the onion with salt and pepper
3. Add the slices of beef
4. Pour the oyster sauce and soy sauce
5. Add the water
6. Wait for the beef to become tender and serve

It was cold and wet this morning. DH had to take our DD for her Well Baby visit. She was due since last month, but we haven’t had the chance to take her since she kept getting sick. Anyway, I wanted to make sure we had something warm for breakfast when they got back, so I whipped up an easy Chicken Noodle soup recipe.

Ingredients:
Instant Ramen (Chicken Flavored)
Cabbage
Rotisserie Chicken
Water

Directions:
1. Boil the water and add the ramen
2. Chop the cabbage and add into the pot
3. Slice some pieces from the rotisserie chicken and add to the soup.
4. Add seasoning packet to taste.

Hot Dog and Nori

I’ve worked in three Korean preschools during my whole lifetime and I have to admit those were the most fun I’ve had working, ever!

They served some strange meals, but they were absolutely tasty. One dish they would serve to the kids was sliced hotdogs in ketchup with a side of rice and Nori (seaweed). Asian kids can just munch on Nori like chips. Even my son enjoys it too. I can give him a 1/4 sheet of roasted seaweed and he’ll be happy for a while.

I decided to make it for breakfast the other day. For the hotdog, I pan fried it after slicing it into smaller pieces. Then I added some ketchup, a little soy sauce and a little sugar. After the sauce thickened, I removed it from the fire. I plated it next to small sheets of roasted seaweed and rice. I put the rice in the frying pan to soak up the remaining sauce. I wouldn’t want it to go to waste.

Now for the fun part. You take a small sheet of Nori then place a tablespoon of rice on it. Then you place a few slices of hot dog on top, fold the seaweed and enjoy!

Kids love eating this way, I guess you can try it with other meats too! =)

Dinner Impossible

On tv the other night, I was shocked to see that Chef Robert is no longer the host of the new season of Dinner Impossible. The new host is Chef Michael Symon who won Next Iron Chef. I was a little sad and didn’t know what to say at first. I was thinking that Chef Robert’s contract with Food Network is probably over but according to some blogs I read, there was a scandal about his resume.

The new host Chef Michael Symon did pretty good at the Next Iron Chef competition, so he might do well as the new challenger. So anyway, on the episode that I caught that night, I saw him did bacon on chocolate. It sounded and looked weird, but people liked it. So, I decided to try it out for myself. I figured, if they did it on food network, it can’t be that bad right?

As it turns out, it was pretty good. It was better with a thicker chocolate coating than with less. DH enjoyed it. He called it a heart attack on a strip, lol!
